Cauliflower Nachos

I tend to cook healthy-ish, and I always try to sub my cravings with a healthier alternative. Currently our obsession is cauliflower nachos. We have been making them about twice a week and they are to die for!

The great thing about this is that its completely a create your own type of appetizer. Try different things sometimes! I have been really wanting try like smoked gouda on them.


1 head of cauliflower
2 table spoons of olive oil
1-2 teaspoons of black pepper
1 teaspoon of salt
1 cup of cheese
1 jalapenos chopped
1/2 half small onion diced
1 roma tomatoe chopped

optional: like I said, anything is really optional on this. We add habanero pepper, sour cream, black olives, and even bell peppers on it.

  1. Preheat the oven to 350

2.cut the cauliflower. Keep it somewhat chunky. 20170213_190551You don’t want the pieces to be too small

3. Coat the cauliflower with the olive oil and spices in a bowl, then place them on a baking sheet

here are the spices we used this time

4. Place the cauliflower into the oven for 30 minutes or until golden brown


5.  Add your cheese and your preferred veggies and place back in he oven until the cheese is melted.

6. Once the Cheese is melted add your sour cream if you would like, or maybe some avocado. 20170213_200101.jpg

Serve hot!  We tend to eat it right off the cookie sheet… who needs plates!
