Spicy Salmon and Bok Choy with Rice

I found this recipe a while back and tucked it away for awhile.  I was going through the 1000 recipes that I have and stumbled on it again and decided to give it a whirl.

It turned out fantastic for how simple it is. I will absolutely keep it available for those quick “I don’t want to cook” nights.

The stuff

1cup long-grain white rice

Check

2tablespoons honey

Check

1tablespoon soy sauce

Check

¼teaspoon crushed red pepper

Check

4 6-ounce skinless salmon fillets

Check

 

1pound baby bok choy

Do it

  1. Cook the rice according to the package directions.
  2. Meanwhile, combine the honey, soy sauce, and red pepper. On a foil-lined rimmed baking sheet, broil the salmon fillets until opaque throughout, 8 to 10 minutes, basting with the honey mixture during the last 3 minutes.
  3. Steam baby bok choy (cut into quarters) until tender, 8 to 10 minutes. Serve with the salmon and rice.
